Raw Beet Salad --- from Becca

Mix: 3 T. Balsamic Vinegar
         1 T. olive oil
         1/2 t. dijon mustard

Add;  1 T. minced shallots
           2 T. fresh mint, chopped

Pour all of the above over:
1 pound shredded red beets

Top with crumbled goat or feta cheese.

options:  Add shredded carrot and/or shredded granny smith apple for extra sweetness and tartness.
                Add some sunflower or pumpkin seeds
